Beef

We choose our beef for quality: good marbling, good flavor, and a clean cut. Most people choose grain-fed. We also have grass-fed.

A quarter is a good place to start. It gives you some of everything: steaks, roasts and ground beef.

What you get

  • Delmonico, T-bone or New York strip, filet mignon and sirloin
  • Chuck, arm and round roasts
  • Short ribs, brisket and stew cubes
  • Ground beef in chubs or vacuum packaging

Good to know

  • A quarter is about 100 to 120 pounds of meat and needs about 4 cubic feet of freezer space.
  • A half is about 200 to 240 pounds. A whole is about twice that.
  • Priced by hanging weight. We send the price when we reply.

  • Pork chops (boneless or bone-in)
  • Boston butt and spare ribs
  • Bacon and ham, cured and smoked at the shop
  • Sausage and ground pork

Good to know

  • A half is about 70 to 90 pounds of meat and needs about 3 cubic feet of freezer space.
  • Priced by hanging weight. Curing and smoking are priced separately.

What you get

  • Leg of lamb, whole or split
  • Shoulder roasts or chops
  • Shanks, ribs and ground lamb

Good to know

  • A whole lamb is about 35 to 45 pounds of meat and needs about 2 cubic feet of freezer space.

Questions

How much freezer space do I need?

Plan on 1 cubic foot for every 25 to 30 pounds of meat. A quarter of beef needs about 4 cubic feet, half a pig about 3, and a whole lamb about 2.

How is the price figured?

Shares are priced by hanging weight, which is the weight before cutting. The price we send includes processing. Extra charge items will be priced according to your selection.

How long does it take?

It depends on the time of year and the shop's schedule. We give you a date when we reply. Beef hangs for about two weeks before it is cut.

Do I have to choose my own cuts?

No. The cut sheet comes filled in with common choices. Change what you like, or leave it as it is.

Can I split a share with someone?

Yes. Each household fills out its own cut sheet, and we pack the orders separately.

Where do I pick up?

At the butcher shop on Wintersville Road. Pickup at the farm is by arrangement only and needs notice. The meat is frozen, packed in boxes, ready for you to pick up. Shop hours are Monday to Friday, 8 a.m. to 5 p.m.
